Whole Wheat Sandwich Bread

1 1/2 cups water

3 tablespoons vegetable oil or any neutral oil

2 teaspoons active dry yeast

2 tablespoons honey or maple syrup

2 ¼ cups (9 ½ ounces) whole wheat flour

1 ¼ cups all-purpose flour
-
2 teaspoons (8 grams) diastatic malt powder

1 ½ teaspoons sea salt

3 tablespoons Everything but the Bagel seasoning, divided (optional)

Stand Mixer with dough hook attachment

Stir water, oil, yeast and honey (maple syrup), until combined in large bowl or stand mixer with dough hook attachment.

Add whole wheat flour, all-purpose flour, malt powder and salt to the large bowl or stand mixer; mix on medium-low until combined, about 1 minute.

Turn mixer speed up to medium and mix until smooth, 6-8 minutes.

Add 2 tablespoons Everything but the Bagel seasoning to the mixing bowl on low speed, until just incorporated.

Transfer the dough to a lightly greased bowl, cover bowl, until doubled, about 60 minutes.

Meanwhile preheat oven 350F. Grease a 9” x 5” loaf pan and set aside.

Transfer the dough to a lightly floured workspace and shape into an 8” log and place in the prepared pan and cover with greased plastic wrap or damp towel and let rise until about 1” above the edge of the pan, about 1 hour.

Brush 1 teaspoon water on top of the loaf and sprinkle the remaining 1 tablespoon of seasoning onto to garnish.

Bake in the preheated oven until the interior registers195F on an instant read thermometer and is golden brown, about 35 minutes.

Remove from the oven, let cool in pan for 10 minutes, then remove loaf onto a cooling rack until completely cool, about 45 minutes.
Notes & Tips:
- To make ahead: Make through step 7, cover and place in the fridge to rise instead of letting rise at room temperature for 1 hour.
- Use this recipe as a base recipe to play around with ingredients to add flavor to it.
